Quick & Easy Healthy Meal Tips!

I personally, from experience, don’t think there is any kind of healthy meal that is “quick”! But it can be if you prepare! Always remember….

IF YOU FAIL TO PLAN THEN PLAN TO FAIL!

If you take time on Sunday afternoons to prep your meals for the week…then, yes! It becomes quick, easy and healthy! When I say “prep”, I’m talking about chopping veggies, cooking and shredding chicken and/or turkey and planning your meals out for every day so that there’s no excuse for you to fall off track!

Here are some tips that have helped me with being quick, easy and healthy!

1. Don’t buy too much veggies all at one time…they’ll just go bad! If I buy one (two tops) of red, yellow, green peppers, a small box of mushrooms, a small bushel of scallions, a couple tomatoes then that will last me through the week to make a junk salad a few times a week and still have left over veggies (that I will pre-cut and store individually on Sunday) to throw into an omelet in the morning!!

2. Buy the pre-cooked turkey and/or chicken from the bakery/farmstand section of the grocery store! Bring it home, take off the skin and shred it up (freeze what you don’t use for the following week) and throw it into your salads for protein!

3. Don’t forget the shredded cheese and nuts (sunflower seeds, walnuts, etc..) in your salad for extra protein too! Junk salads (all of the above ingredients) with plain oil and vinaigrette are pretty much the only way I’ll eat a salad…I’m not a salad lover at all… but this kind of salad… YUM, I could eat it every day!

4. You want a quick breakfast…make an omelet…it’s a lot faster than I thought it would be, especially when I already have my veggies chopped and ready to go! Pop in a piece of whole wheat toast, add peanut butter ~ and shazam… you have a healthy ~ protein-filled breakfast to start your day and keep you full! *trust me, it’s quick once you get the hang of it, and since my veggies are pre-chopped, it makes all the difference! * in a matter of 2 weeks, I am able to pack my daughter’s lunch, make breakfast for both of us, sit down, finish eating, clean up and be out the door in a matter of 20 minutes ~ damn I’m good!

5. Another breakfast would be the Special K Protein cereal. This is probably the ONLY cereal out there with a GREAT protein to carb ratio!

6. This is usually a weekend breakfast for me but… toast an english muffin, top it with greek yogurt or ricotta cheese and canned crushed pineapple (include the juice too for taste)…put it in the oven for about 10-15 minutes to heat! This is good for my Saturday’s because it’s extremely filling and keeps me from snacking during the day while I’m home!

7. I personally love cottage cheese! A lot of people don’t but I can eat it straight out of the carton! It is great protein! My favorite is cottage cheese with cantaloupe! I even have it as a side dish when I eat a lean cuisine or smart one frozen meal to get more protein!

8. Make your lunch! If you eat breakfast with a lot of protein (between 40-50g) then YOU WILL be full until lunch! So make HALF a turkey, cheese and mustard sandwich. Bring along some string cheese and some V8 Juice too! ~OR~ if you get sick of sandwiches, switch it up with a tortilla “La Tortilla Factory” is a great/healthy brand of tortillas and they have different flavors too!

9. Bring along a small bowl full of fruits and/or a baggy of almonds for a late afternoon snack!

10. Always have a supply of protein in your purse or car (peanuts, almonds, cashews…watch the serving size….sunflower seeds, soy nuts, beef jerky, or the best/healthiest protein bar is SOUTH BEACH…not slim fast, not special K, not any of those…just south beach) for late nights at the office so that you don’t over eat when you get home!

11. There is always a meal replacement drink! I’m not too fond of these myself, just because I don’t like to “drink” my meals! However… maybe 2 -3 x’s per week I will replace a meal with a shake if I just don’t have time at all! I personally like Juice Plus+ complete shakes! Herbalife also has some really yummy recipe for their shakes…I found that out through a supplier called Crystal Lake Nutrition. They sell Herbalife products and have all the recipes too!
